The food business is increasingly reliant on research and development as eating habits reflect higher demand for health food and a swelling world population means more mouths to feed.

The Netherlands ... spends 0.06% of its gross domestic product on R&D, especially food technology that has led to 21 patented innovations.

In the Netherlands, many leading research institutes offer assistance to any private company that wants to improve product quality.

....flavour and texture are important to health food consumers.

For instance, a company wants a zero-fat ice cream. The challenge is cutting the fat but maintaining the flavour....

Researchers have been successful in reducing the salt content of bacon and bread by 30% while retaining the original flavour, a change that could improve cardiac health.

...technology can produce quick success for companies in terms of the flavours, textures and aromas that attract consumers.

Located at Wageningen University and Research Centre, a "restaurant of the future" has TV cameras set up to capture diners selecting various kinds of food.

The collected data will show how many minutes the subjects spend choosing their food and their body language that they use to express feelings towards the food.

...The restaurant has the technology to monitor responses to food including brain scans and pulse measurement in order to determine the best aroma.

Meanwhile, private companies are striving to develop vegetables that require fewer pesticides, using hybrid technology.

Hybrid technology can produce crops with a strong resistance to disease, leading to less chemical use.

The hybrid method is similar to GM but does not change the gene, instead selecting the best DNA for breeding the plants.

Still, it remains an emotional issue in Europe.

Like it or not, the food trend of the future appears to be a combination of hybrid and GM technology.

Without such technology, feeding an estimated world population of 9 billion in 2050 will be impossible,...

The expo is a Dutch agrifood technology exhibition, where entrepreneurs and researchers meet to inspire the food of the future.

A company named Solynta won the 2012 Food Valley Award. The company's seed-based hybrid potato breeding enables faster development with specific traits.

Its breeding system is 3-10 times as fast as traditional breeding.

Moreover, yield has increased by 30% with a 60% lower use of pesticides due to natural resistance.
