As part of a hotel-wide programme of fabulous festive season dining, Rembrandt’s high-in-the-sky, ultra authentic Indian restaurant Rang Mahal has a raft of festive buffet events brimming with sensational sub-continental cuisine to celebrate the year-end holidays in spicy, aromatic and sumptuously satisfying style.

From its 26th-floor perch overlooking the bustling Sukhumvit-Asoke junction, Rang Mahal has been dazzling palates with meticulously authentic, exquisitely prepared Indian cuisine for 23 years.

True aficionados will appreciate the vast selection of Indian delights — spanning Mughlai, Nawabi and “Frontier” cooking styles — served amid opulent traditional décor reminiscent of the lavish lifestyles of history’s Maharajas.

For the final evening of 2016, Rang Mahal Head of Indian Cuisine, Chef Rajan Misra and his team have prepared a New Year’s Eve buffet dinner menu that superbly captures the true flavours of this centuries-old cuisine.

At the Tandoori station, meats and Indian fresh cheese are char grilled to perfection in the traditional tandoori clay oven, and it’s here you’ll discover Rang Mahal signature dishes Roganjosh Kashmiri pot-roasted mutton cooked in herbed onion gravy; and Kesari Jheenga jumbo saffron-yoghurt prawn. Also appearing are Rajasthani specialties from India’s northwest like Pathori Chaap spicy char grilled lamb chops in rich Indian spices; Tandoori Laal Mirch Ka Paneer char grilled seasoned Indian fresh cheese; plus slow-cooked Murgh Mukul boneless chicken with almonds, cashew nuts, onion and cardamom.

Further complicating the dilemma of deciding which of the dozens of delicacies to start with, other regional specialties include Kashmiri-style herbed roast mutton; Hyderabadi Gosht Dum Biryani Basmati rice with lamb, Indian herbs and saffron, slow cooked on fire “DUM” technique), Kerala style grilled whole Seabass; Atti Batter spice-marinated quail; and Amritsari seekh kebab- minced lamb skewers marinated in garam masala. Vegetarians rejoice! Rang Mahal enthusiastically embraces your dining preferences with a meatless selection as big as an epic Bollywood musical. Indian fresh cheese highlight dishes include Cheese-stuffed potatoes; Saffron cheese dumplings in cashew nut gravy; and Rajasthani-style tandoor-grilled cottage cheese with cumin yoghurt.

The meat and milk-free menu offers assorted grilled vegetables; yoghurt -spice marinated jackfruit; deep fried Okra with dry mango; Masala and herb-stuffed whole bell peppers and tomatoes; and Rajasthani-style steamed gram flour dumplings in yoghurt sauce.

Rembrandt’s Chaat stall is brimming with the famous Indian street-stall savoury snacks, including spiced vegetables patties; semolina pancakes with yoghurt mint sauce; flaky pockets filled with fried lentil vermicelli and yoghurt tamarind sauce; Grilled Paneer cheese with red chili and pineapple; Chickpeas and potatoes in tamarind sauce, and spicy masala with chicken, plus poppadums, plain and Garlic Naan; Laccha Paratha; and Roti tandoori, and authentic condiments like chutneys, sauces and pickles are also included.

An ice carving-chilled fresh Seafood bar station is teeming with premium shellfish like rock lobster, crab, oysters, shrimp and mussels, plus whole Indian herb-coated seabass. Appetisers include fried Indian-herb crab patties and assorted Samosas.

Kathi rolls with chicken, fish, prawn, lamb, salmon and crab meat are here, along with Atta Murgh whole saffron-cardamom chicken; Roasted lamb shanks with maze and nutmeg; and herb-salt crusted masala stuffed fish.

An irresistible spread of traditional Indians sweets and western desserts temp all who pass by.

Meanwhile, Christmas Eve and Christmas Day are also dates denoting delicious dining at Rang Mahal, with day and night Indian-spiced yuletide feasts featuring a host of alluring dishes, with highlights like Murgh Malai boneless chicken in cream cheese and herbs; Methi Machli Kebab Boneless Tandoor grilled boneless fish; and Hara Kebab fried spinach, potato and fresh cheese; and clay oven-baked Paneer Tikka seasoned fresh cheese.

In a touch of pure western culinary tradition, sliced Christmas Turkey with sage-chestnut & chicken stuffing is served with all the trimmings at the Carving Station; along with a sensational Salt-crusted whole sea bass stuffed with garlic, onions and lemongrass.

At the Live Pasta Station there’s Spaghetti & penne with tomato-, cream mushroom- or lamb ragout sauce along with authentic Italian condiments.

The India Street Food stall features all-time finger-food favourites like Vegetable Samosa and Aloo Tikki fried potato patty with tamarind sauce. Mains course dishes include Goan Fish in coconut curry; Murg Tikka Masala boneless tandoor-roasted chicken; and Rogan Josh Kashmiri roast mutton.

The wide variety of meatless fare also features Gobhi Kashmiri herbed cauliflower and potatoes; Palak Makai Creamed spinach and corn with garlic; and Methi Malai Matter green peas with fenugreek; plus black and yellow lentils in spices, tomato and onion. A selection of breads such as plain and Garlic Naan; Laccha Paratha; Roti tandoori and poppadums; along with chutneys, sauces and pickles is also available.

All buffet menus include free flow non alcohol beverages including traditional Indian Lassi, spiced milk drinks, fresh fruit juices and carbonated soft drinks, along with a tempting list of Indian desserts: Gajjar Halwa milk and carrot loaf; Gulab Jamun cream cheese dumplings with cardamom; and Kesari Rasmalai Fresh cheese cake with pistachio. And the western festive desserts selection is an all-star suite of succulent sweetness, with traditional favourite highlight Chocolate Christmas Yule cake; along with Chocolate truffle cake; and Christmas pudding with brandy sauce. And as if that weren’t enough, there’s Crepe Suzette flambé, French pastries, fresh strawberries with whipped cream; and assorted Ice Cream flavours with sauces and condiments for DIY sundae delights.

And throughout the holiday season all Rembrandt dining venues are offering traditional, house-made Christmas Stollen loaf with almonds, rum marinated pear, marzipan and raisins and Christmas cookies in classic varieties like gingerbread, cinnamon star, Lackerli and Brunsli.
