Thailand's tropical-island paradise Koh Samui is to welcome world-famous Danish chef Mads Refslund, a co-founder of two Michelin-starred restaurant Noma and owner of Michelin-starred restaurant MR in Denmark, into one of its world-class resorts, W Koh Samui, on Nov 27.

Refslund, a 41-year-old Copenhagen native, is among the pioneers in new-Nordic cuisine, a culinary movement that reinvents and develops food from the Nordic countries -- namely, Denmark, Finland, Iceland, Norway, Sweden and Greenland. And as he writes in his book, elements of a dish in the new-Nordic kitchen should be grown or foraged locally and used in their entirety whenever possible.

His cooking creations have four times earned him Denmark's Critics Choice/Dish of the Year, in 2003, 2007, 2008 and 2009. Now living in New York City, Refslund is a darling among food critics for his unique creativity, telling great tales through his feminine and playful cuisine with a passion for seafood and vegetables.

During his one-night-only culinary showcase at W Koh Samui, the Danish star chef will present a multicourse wine dinner under the theme of "Extreme Wow Ocean Haven".

The evening menu includes his signature dishes, such as an appetiser platter of beetroot and elderberries as well as uni tart. It is followed by hamachi with black radish and chestnuts; sweet shrimps with salted plumbs and dried red peppers; king crab cooked in rosemary branches; grilled salmon skin with English peas and grilled cucumbers; and 30-day dry-aged duck served family style with condiments. The meal is wrapped up with green coconut with porcini and black truffle dessert.

The New Nordic cuisine dinner by chef Mads Refslund is priced at 4,200 baht per person, inclusive of wine pairing.
