The Troisgros are a family of French restaurateurs who have pioneered the legacy of French cuisine since 1957. Michel Troisgros is the current owner of La Maison Troisgros, and has had its three Michelin stars since 1968. Considered a temple of French gastronomy, the restaurant acquired notoriety from numerous international accolades, including "Best French Restaurant in the World" by Gault Millau, "Best Wine List" by Wine Spectator and "Best Restaurant in the World" by Zagat Survey. It has been a member of Relais & Chateaux since 1966. World-renowned Michelin chefs who have been apprenticed at Troisgros include Marc Haeberlin, Guy Savoy and Traci Des Jardines.

Michel Troisgros' cuisine is minimalist, with no flounces, sometimes playful, but with respect for flavours, and gives freedom to seasoning. At La Maison Troisgros, César works alongside Michel, earning praise for creations that are particularly sensitive to ingredients and surroundings. He follows closely in his father's footsteps and is known for his high-level contemporary gastronomy, featuring exceptional cooking, stylish presentation and innovative flavour combinations.  During the six-day promotion at Lord Jim's, César will present two set dinner menus — six and eight courses — priced at 4,700 baht++ and 5,400 baht++, respectively. The dinner menu features delightful creations, including razor clams on pineapple jelly, salted and anise-infused oysters, poached turbot with tomato water, pan-fried foie gras Agro-Dolce style, langoustines "Journey to Parati", Bresse pigeon with peanuts and roots, and blackcurrant and jasmine tarts.

His finale presentation is a special wine dinner on Nov 1, featuring a seven-course menu accompanied by outstanding Ornellaia, Italy's most celebrated and award-winning wine producer. Ornellaia's production philosophy is based on the belief that wine must be a most faithful expression of the terroir that produces them. The respect for the estate's unique territory guides all aspects of production: limited quantities to ensure maximum quality, attention to every detail, selective hand harvesting, microvinification and ageing.

The Ornellaia wine dinner, priced at 7,900 baht++, features well-designed specialities including foie gras velvet with grapefruit and almonds, complicity of crabmeat and tomato, red mullet with parsley and truffles, grilled spicy lamb rack, beef with bone marrow, fresh and matured cheese, and dessert of meringue with blackberries and chartreuse.
