New á la carte menu at Rossini's

Chef Luca Cesarini invites diners to explore his exciting new à la carte menu of modern Italian cuisine at Rossini's Italian restaurant, Sheraton Grande Sukhumvit. The exceptional menu is infused with his own inimitable style and creativity but respects the culinary traditions of his native Italy which remains at the heart of every dish.

Diners can begin their memorable lunch or dinner at the award-winning Italian restaurant with enticing antipasti including seasonal autumn roasted vegetables with a light anchovy 'bagna cauda' dressing, and grilled octopus with polenta and salsa verde. There's also delicious pan roasted jumbo scallop with cauliflower, spring onion and Amalfi lemon, melt-in-the-mouth Piedmont Fassone beef tartar with hen bottarga, winter black truffle, sprouts, and traditional liver pâté, and seared goose liver with pumpkin foam, balsamic vinegar, Amaretti, and garden herbs. Chef Luca's new menu also features a delicately flavored artichoke soup enriched with 24 month matured Pecorino, and a Tuscan seasonal vegetable soup with sous vide egg and pan toasted breadcrumbs.

Fresh homemade pasta dishes include the signature sage butter and veal agnolotti with truffle sauce and a light veal jus, and the rich and comforting classic spaghetti alla carbonara with Guanciale ham, Parmigiano Reggiano, eggs and cream.

Created to accompany wines from "primoVino by Rossini's", winner of the coveted award for "Best International Hotel Wine List" in the "Wine List of the Year Thailand Awards" and the "Wine Spectator Award of Excellence", the menu also includes two outstanding main course signature dishes, snow fish with potato foam, San Daniele ham powder and Taggiasche olives, and succulent sous vide milk fed veal tenderloin with foie gras, potatoes, baby spinach, and black truffle jus. Other delights on the distinctly modern menu are a duo of lobster with capsicum stew and charcoal seasonal roots, and a composition of Siena black suckling pig, artichoke purée, and roasted baby fennel.

Chef Luca has also selected some of Italy's finest cheeses. Diners can enjoy a tasting of matured cow and goat blue cheese with brioche and forest honey, a trio of traditional Piedmont
cheese with toasted raisin bread and sunflower honey, and more. There's also divine desserts such as Chef's Luca's interpretation of a luscious tiramisu with mascarpone cream, ladies finger crumble, coffee granita, Amaretto and dark chocolate, and his intriguing signature crème brûlée with celery confit, green apple granite, and Amalfi lemon sorbet.
