Bangkok is ready to welcome another top culinary master when the celebrated two Michelin-starred Portuguese chef José Avillez will stage his culinary debut at the award-winning Lord Jim's restaurant at the Mandarin Oriental, Bangkok, from May 24-28.

Considered one of the most celebrated Portuguese chefs, Avillez embraces the culinary traditions and gastronomic soul, his enthusiasm in creativity has no boundaries. He owns five restaurants in Lisbon and one in Oporto, each with a different concept and personality to exemplify his relentless passion in cooking.

His internationally-acclaimed Belcanto restaurant in Chiado, located in the historic heart of Lisbon, was bestowed Michelin stars in 2012 and 2014 respectively, and elected one of the best 100 restaurants in the prestigious "The World's Best Restaurants List" in 2015. The sophisticated restaurant exclusively caters to 10 tables only, allowing Avillez to execute his very own gastronomic journey, a sensory experience unrivalled to none.

"Portuguese cuisine is based on stories and history, our kitchen is inspired by these regions, from the sea and the countryside to a more urban culture, but it's not a substitute for the original, it's an addition to it," said Avillez. His greatest inspiration comes from traditional Portuguese cuisine; the flavours, the textures, the products and a precision in cooking techniques.

During his five-day residency at Lord Jim's, Avillez will present two set dinner menus. The five-course set dinner comprises creations such as smoked eel and nasturtium; giant red shrimp with maize porridge; oxtail with foie gras, pumpkin purée and watercress; and "dip in the sea" sea bass with seaweed and bivalve mollusks. The price is 4,700 baht++ (additional 2,800 baht++ for a choice of five glasses wine pairing).

The seven-course set dinner offers delightful dishes, including cherry gazpacho with spider crab and runner beans tempura; giant red shrimp with rosemary ashes; cod flakes, maize porridge and cod isinglass with Bulhão Pato cream; and braised pork rib with red bell pepper paste, sweet potato purée and lettuce heart. The price is 5,400 baht++ (additional 3,150 baht++ for a choice of seven glasses wine pairing).

The exclusive seven-course wine dinner on May 28 features exquisite French wines from E. Guigal Winery. The price is 6,900 baht++.
