Sip climate-friendly ‘ecococktails’ at Lennon’s

Do good for the environment and drink green, and I don’t mean green juices.

Lennon’s bar at Rosewood Bangkok is taking beverage sustainability to new heights by partnering with ecoSpirits, the world’s first closed-loop spirits technology that strives to reduce the carbon impact of premium spirits by up to 80% through the elimination of single-use glass bottles.

A special ecoCocktails menu has been crafted with locally-sourced ingredients and is complemented by ecoSpirits’ low-waste technology. “Our ecoCocktails reduces waste and creates delicious tipples, so it’s a sustainable win-win for bar and guests,” says Guiseppe Carneli, Lennon’s bar manager.

The ecoCocktails are created in partnership with Nonthaburi-based Kosapan Distillery, which manufactures Kosapan Botanicals, a line of distillates primarily made with organic local produce. The hotel has also tied up with Sea’s Kombucha, another local artisanal craft brewery, which makes kombucha. Three kombucha varieties available at the hotel are: Coffee and passionfruit, Mango and Mint.

The four ecoCocktails at Lennon’s are:

♦ The ecoMali or jasmine, priced at B640++, is a twist on the French 75 cocktail and uses re-carbonated Champagne. Lennon’s gives the noble Champagne new life: once flat, it is mixed with raspberries, various acids and re-carbonated in-house.

♦ The ecoKoko is priced at B530++. “Koko” is the Thai word for cacao and Thai-grown Chumpon cacao is the main ingredient in Kosapan Cacao Botanical, which is used in the thirst-quencher. The Coffee and passionfruit kombucha is the perfect mixer for this drink.

♦ “Som” is the Thai word for orange and forms the basis of the refreshing citrusy note of Kosapan Orange Liquor component of the ecoSom, priced at B500++. The tipple is made with a touch of lacto-fermented mango honey that adds a more complex favour, as well as extending the shelf life of the mango.

♦ The ecoSoon is named after the Thai numeral zero aka “soon” and, if you haven’t guessed it already, is non-alcoholic. The drink uses alcohol-free gin, Lennon’s housemade soon vermouth (which contains classic botanicals and leftover ingredients from the bar) and bitters and is a take on the popular 1919 cocktail. It is priced at B450++.

Lennon’s goes greener by having the ecoCocktails menu printed on sustainable compostable paper, embedded with tree seeds. Guests can take the menu home and plant it in soil — as the paper composts, all that is left behind is new life and zero waste.

EcoSpirits is the world's first low-carbon, low-waste spirits distribution technology and a closed-loop distribution system that nearly eliminates packaging waste in the premium spirits supply chain. The world produces around 40 billion glass spirit bottles annually, generating 22 million tonnes of carbon emissions. With each bottle eliminated, ecoSpirits saves at least 550g of carbon emissions. This means each cocktail or spirits pour saves 30g in emissions. Every little bit helps, right?
