Shangri-La Bangkok's Volti rebrands itself as a Tuscan grill

After a two-year hiatus, Volti at the Shangri-La Bangkok is back rebranding itself with a Tuscan grill concept.

Volti Tuscan Grill & Bar’s interiors offer urban Italian-chic with panoramic views of the Chao Phraya River and the hotel’s tropical swimming pool. Enjoy sundowners at the lounge and stylish bar on the first and third levels of the venue. There is even live opera to serenade you daily!

Executive Italian chef, Bruno Ferrari helms the kitchen. “Volti’s menu is all about authenticity. We are proud to serve only the best of the best — from premium cuts to carefully selected ingredients sourced both locally and abroad. Almost all items are made in-house; from our pasta, to the house-infused limoncello to finish the meal. That is the level of attentiveness our chefs dedicate to every dish we serve to our guests,” says the chef.

Begin with the Prawns and rosemary (B560) served with cherry tomatoes, garlic, rosemary and parsley oil. Though if you're in need of some carbs, the Crostini Castagne and lardo (B520) is a good choice. Housemade focaccia is lightly grilled and topped with poached chestnuts, lardo di Colonnata and wild honey. The lardo di Colonnata originates from Colonnata in Tuscany and is sourced from special black pigs and undergoes an ageing process of six months in a marble basin. The lardo is layered with sea salt and a special spice mix.

The open kitchen, a favourite of mine, on the second level offers views of the Austrian-designed charcoal grill. All the meat on offer is cooked in the Tuscan smoked and wood-fire style, beginning with a full-blood 100% Japanese Wagyu (A5). Also available is the Australian Angus (MBS3+), with the highest score of Angus beef from Darling Downs, Queensland. The winner of the best Angus steak award, this meat is prized for its tenderness and robust beef flavour. Another choice is the F1 Wagyu (MBS 7+), which received the highest score for Australian F1 Wagyu.

Bistecca Alla Fiorentina.

The meats are basted in ginger, infused with Wagyu fat and served on Himalayan salt blocks to ensure the steak temperature is maintained with every bite. Though if red meat isn't your thing, you can always go for the Boston lobster (B2,500) or Jumbo tiger prawns (B2,300 for two). 

Volti features a comprehensive wine list, including some of the best wines of Italy. Artisanal craft brews are kept crisp and cold. For guests who could not get enough of smokey treats, Volti’s smoked cocktails are a must-try.
