Extraordinary extravagance has become the name of the game among weekend brunch establishments in Bangkok.

And it has now come to the point when operators intentionally disregard whether they are making money simply to boast of their generosity and excellence. Of course, diners are the winner.

Of them, the pioneer is Centara Grand at CentralWorld.

The hotel's seven-month-old Uno Mas Spanish restaurant, which took over the space of the erstwhile Fifty Five restaurant, has recently launched its brand-new edition of Sunday brunch.

Retaining the one-of-a-kind unselfish attitude of Fifty Five's legendary Surf & Turf Champagne brunch, Uno Mas has now come up with an as brilliant, if not even better, rendition of the all-you-can-eat weekend gastronomic treat.

Dubbed "Sunday Bubbly brunch", the feast is presented in a Spanish-style festive manner and operates only on the first Sunday of the month (except for the upcoming event, which is on Aug 14).

It showcases a bountiful buffet line-up of gourmet tapas and prime-grade seafood, as well as well-executed à la carte dishes, which can be ordered unlimited from the menu. The price is 3,555 baht per person, including premium beverage package.

Upon entering the sky-high venue, you'll find from the marisqueria (shellfish bar) a selection of oysters, namely Galician, Delta de L'ebre, San Fernando and Tsarskaya, together with classic and Thai-style condiments. Caviar aficionados will be delighted with options such as Avruga and Anchoviar.

The cold seafood station includes Maine lobster, rock lobster, Phuket lobster, tiger prawns, king crab, razor clams, langoustine and brown crab, to be enjoyed with choices of dipping sauce. Salmon, eel and halibut are offered cooked and smoked.

On the day that I visited, the tapas bar counter was occupied by a mouthwatering range of ceviche, assorted Spanish charcuteries, salmorejo soup, Oreo cookies with foie gras and endives-goat cheese salad.

An impressive number of dishes were available to share.

Served to our table were potato bravas; wild porcini mushroom croquettes; Joselito ham croquettes; fried mussels; cod fritters with padrones; foie gras terrine; Uno Mas chicken wings and tomahawk steak.

Though every single one of them proved worthy of stuffing your tummy with, I couldn't afford not to mention in particular the last two.

The silky duck liver terrine, garnished with Spanish figs and quince paste, was as if it was a nobleman dessert made in heaven. The chicken wings had a marvellous, yet not too strong, hint of Moorish herbs, while the crispiness was just impeccable. While the steak, perfectly medium-cooked, was extraordinarily tender, exhibiting a good beefy flavour with strong charred touch.

Some grub did arrive on trolleys accompanied by the chef. Freshly prepared and served upon guests' orders were the likes of baked blue-lipped clams, Iberian ham, collection of Spanish cheese and suckling pig "cochinillo", which was served in an exciting manner.

Now you wonder if, after such a sumptuous parade of gourmet grub, the restaurant would still want to offer you more food selections from the à la carte menu?

The signature roasted suckling pig is so tender you an cut it with a plate.

May god forgive them. Just once a month, let's allow them the chance of offering this without having to think about the profit.

To be served piping hot from the kitchen were options including snow fish with piquillo pepper sauce, baked potatoes and aioli gratin; grilled Maine lobster; sizzling tiger prawns with garlic and chilli; and the not-to-be-missed black ink paella with tiger prawns and clams.

There was also Pyrenees lamb rack with "escalivada" roasted vegetables and olives purée; charcoal grilled tenderloin with cabbage stew; pan-seared duck foie gras with "Pedro Ximenez" wine sauce; and grilled Iberico pork with chimichurri sauce.

Guests can pick their preferred choices of sweets from the dessert bar. Or enjoy assorted Spanish dessert platter, which is served to your table. To seal their generosity, there's a complementary box of desserts for the guests to take home.

Other than the welcome sherry upon arrival and variety of cocktails and sangrias, guests will enjoy the free flow of G.H.Mumm Cordon Rouge Champagne, Catalunya white wine and Rioja.

Reservations are a must.
