Phad Thai 4.0

Truck Padthai Seafood puts a new spin on the Thai favourite

Lately, there has been talk about Thailand going 4.0. And I just found a food truck which makes phad thai like it's 2017 -- phad thai 4.0, if you will. The Truck Padthai Seafood offers the dish that is so synonymous with Thai cuisine with some new twists. And there's no sad shrivelled dried shrimps to be seen here, people.

Besides the classic sen chan, you have three more choices of noodles -- black spaghetti, konjac noodles and glass noodles -- in case you fancy something different.

I decided on Pad Thai sen chan with egg and seafood (B160) and was happy with it. The dish offers well-balanced flavours and a jumble of textures as it should. The thin sheet of omelette blankets several goodies underneath it from firm tofu cubes, crunchy bean sprouts, sweet pickled radish and pleasantly chewy noodles. What complements all of these elements is a secret tamarind sauce which includes ten types of veggies. The dish doesn't taste oily either since all the ingredients are stir-fried in the tamarind sauce only. Pad Thai seafood with black spaghetti (B180) delivers in a similar way but, perhaps, the cylindrical and solid pasta doesn't jibe with the sauce as well as the flat sen chan does. It's topped with tobiko which kinda got lost in the mix.

By seafood, the food truck means two plump NZ mussels, some squid rings and one soft-shell prawn for each dish. I could really eat the prawn from the first dish whole but I couldn't -- or, perhaps, shouldn't -- with the other so be cautious here. Chillies, peanuts and brown sugar are there if you need extra seasoning but I think both dishes with a few lime squeezes are good enough. You can have your pad thai meat-free (B90) here too.

Pookie and Nest were office workers before turning their common love for phad thai and seafood into this food truck about ten months ago. They brought with them the big guns, namely Auntie Pramin, Pookie's mum and Nest's mother-in-law, who used to run a phad thai shop for 20 years in Klong Lat Mayom Floating Market. Her recipe is the secret ingredient here. g

The Truck Padthai Seafood (www.fb.com/The truckpadthaiseafood) is located in Warehouse 10 area of Asiatique The Riverfront. Head for the clock tower and you should be able to easily find it from there. The food truck opens daily from 5:30pm-12:30am. You can also give them a call if you want a phad thai party at your next event.
