On 23 April 2021, epicures can taste a five-course menu from the acclaimed vegan Chef Marciel Lukkanit at the first and only grocerant Stock.Room.

Inspired by authentic recipes from all over the world, irresistible vegan creations await. Kimpton Maa-Lai Bangkok invites globetrotter and vegan Chef Marciel Lukkanit to serve up her latest five-course menu (THB 1,500++ per person) at the local grocerant Stock.Room on Friday, 23 April 2021. The dining experience also features a vegan wine-pairing (THB 900++) to add a final polish to the meal.

With an international mind and German roots, Chef Marciel specialises in vegan gourmet dining in the beating heart of Bangkok. As the founder of Vegan Crush, she designs plant-based meal plans, hosts vegan cooking classes and advocates for healthy lifestyles. Chef Marciel earned her clout from fusing a diversity of cuisines and highlighting the raw, authentic flavours of homegrown produce. Her delicious mix of recipes is influenced by an array of gastronomies from Spain and Italy to Mexico and Nepal.

Light, refreshing and dazzling, Chef Marciel’s five-course menu is a delightful fusion of flavours, textures and colours that excite. The meal kick-starts with a delicately refined spinach forest with lemon reduction and aged nut cheese. Followed by cauliflower soup, which is best described as a bundle of joy filled with arugula pesto and black garlic. The experience continues with a filled dumpling with butternut and green peas. Amazing roast seitan patty with activated beans and vegan butter. To end on a sweet note, Chef Marciel spotlights her favourite dessert, chocolate mousse with aquafaba and cacao nibs.

The thoughtfully curated vegan wine-pairing showcases wines from both the Old World and New World. From Sonoma of California, Cline Family Cellars’ Ancient Vines Mourvèdre Rosé 2018 is a fun and floral rosé that perfectly complements spinach forest with lemon reduction. With an elegant nose of red and black fruits, Cline Family Cellars Chardonnay, Sonoma, CA 2018 pairs beautifully with the cauliflower soup and arugula pesto. A perfect match for roast seitan patty, the Montepulciano d’Abruzzo Chichibio DOP 2016 ends the experience on a harmonic note with velvety fruit and soft tannins.
