Savour India: Chef Pinaki Ray’s Exclusive Bangkok Pop-up 

Experience timeless Indian recipes with a modern twist as Chef Pinaki Ray brings his culinary artistry to Siam Kempinski Hotel. 

For nine nights only, Siam Kempinski Hotel Bangkok transforms into a culinary playground for Indian cuisine enthusiasts. From 20 to 28 February 2025, Chef Pinaki Ray from Yantra Singapore will showcase his innovative take on traditional Indian recipes in an exclusive seven-course pop-up dinner, celebrating India’s rich culinary heritage. 

Renowned for his modern interpretations of timeless Indian dishes, Chef Pinaki brings a wealth of experience, having worked at Raffles Singapore, Marina Bay Sands, and other prestigious establishments. His concept blends authentic flavours with modern techniques, highlighting the depth and diversity of India’s culinary landscape. 

A Feast of Flavour and Elegance 

The pop-up event kicks off with a trio of creative appetisers: 

  • Khoi Bora – Popped multigrain rice with ginger and fennel
  • Chaat Banarasi – Beetroot crisp with aerated yoghurt
  • Nizam Kathi Kebab – Served with pickled quail eggs 

Each dish reflects the vibrant flavours of Kolkata and northern India. The menu continues with Ema Datshi, a Bhutanese cheese and chilli soup, followed by Mahi Malai Tikka, offering a perfectly seasoned burst of flavour. 

The third course, Lobster Chiney Kebab, brings Bengali influences to the table, followed by a refreshing Panch Phoron Gastrique palate cleanser. 

For the main course, diners can choose from: 

  • Jhal Gosht – Wagyu beef cheeks in a spiced onion sauce
  • Chicken Butter Masala – Served with Southern-style Paratha
  • Gucchi Briyani – A lighter option featuring cheese, morel mushrooms, yoghurt, and fragrant Basmati rice 

The experience concludes with Chef Pinaki’s personal favourites: Bhapa Doi, a palate cleanser, and a nostalgic saffron-infused South Indian ice cream, inspired by his childhood memories.

"My commitment is to glorify the heritage and elegance of India’s bygone recipes," Chef Pinaki shared. "Indian cuisine is full of vibrancy and stories, and it’s my goal to bring these flavours to the forefront and help people fall in love with them." 

The Chef Pinaki Ray Exclusive Pop-up in Bangkok is available from 20 to 28 February 2025, with the seven-course menu priced at THB 4,200++ per person and an optional French wine pairing for THB 7,700++.
