Chef Punn Spices Up Bangkok's Culinary Scene

New executive chef brings fresh perspective to iconic Anantara Siam restaurant

Spice Market, the renowned Thai restaurant at Anantara Siam Bangkok Hotel, has unveiled a bold new culinary direction with the appointment of Executive Chef Punn Akkawin Pitrachart, who has reimagined the venue's menu with contemporary flair while honouring traditional Thai flavours.

Chef Punn, a veteran of several prestigious Bangkok kitchens, brings his philosophy of sustainable, locally-sourced ingredients to the iconic restaurant. His approach balances deep respect for Thai culinary heritage with modern cooking techniques.

"My vision is to present authentic Thai flavours in ways that surprise and delight both local and international diners," says Chef Punn. "Each dish tells a story of Thailand's rich culinary traditions while incorporating contemporary elements."

Highlights from the refreshed menu include Yum Som-O Hoy Shell (pomelo salad with seared Hokkaido scallops and coconut flakes), Tom Klong Pla Ka-Pong (a tangy, spicy seabass soup with sun-dried stingray), and Pranang Gai Yang (red curry with organic chicken thigh, baby eggplant, and bitter beans).

Seafood enthusiasts will appreciate Chef Punn's innovative creations such as Nua Pu Pad Prik Gub Sator (stir-fried jumbo lump crab with yellow chili and bitter beans) and Pla Hi-Ma Thod Num Pla (crispy snow fish glazed with caramelized fish sauce served with sour mango salad).

The menu also features Kai Jiew Pu Gub Sauce Mun Pu (Thai-style omelette with blue crab and crab roe sauce), Nuea Yang (grilled "Little Joe" striploin with roasted rice and green chili relish), and concludes with Cake Yang (grilled black sticky rice cake wrapped in plum leaf, served with salted coconut cream and roasted sesame).

This culinary transformation represents a significant evolution for Spice Market, which has long been considered one of Bangkok's essential dining experiences for authentic Thai cuisine. The restaurant's elegant décor, inspired by traditional Thai spice markets, provides the perfect backdrop for Chef Punn's innovative menu.
