Park Hyatt Bangkok's Penthouse Grill restaurant introduces a special repertoire of tea-pairing desserts to indulge your afternoon in style.

The sweet delicacies come in a five-course set, which costs 1,500 baht per person. To match with the grill room setting, the menu is designed around a flame-grill concept, with each item being complemented by fine tea from Mariage Freres.

Representing the first course is a black sesame crepe cake with creamy matcha sauce and charcoal ice cream. The super soft cake is paired with subtle Fuji Yama green tea.

A dessert called Hot Charcoal follows. It's a banana fritter disguised as a black ember of which its ash-like crust is made with Thai palm sugar. A brisk and flowery Darjeeling Princeton black tea is chosen to complement the sweet crispy treat.

The third course features Burnt Ice Cream to match with Wedding Imperial black tea. It's the restaurant's take on baked Alaska. Underneath a meringue exterior, flambéed at the guest's table, are strawberry coulis, raspberry and vanilla ice cream. A refined blend of Assam tea lends to the course a warm soothing balance with caramel notes.

Fresh local produce from Phuket plays a leading role in the next course, BBQ pineapple with pina colada ice cream, crispy quinoa and passion fruit coulis. The dessert, a delicious exhibition of different textures and temperatures, comes with The À L'Opéra green tea.

The journey impressively wraps up with Smoky Chocolate, which arrives in a whole cacao bean shell. Inside displays a jumble of brownie cubes, smoked chocolate mousse, white chocolate ice cream and roasted Tonka beans. Complementing the chocolate parfait are Rouge bourbon red tea and a shot of Bailey's.

The Afternoon Tea Journey is on offer daily 2-5pm at the Penthouse Grill, 55th floor of Park Hyatt Bangkok. For more information, call 02-012-1234.
