Foraged from the hilly forests of Alba in Italy's Piedmont region, Alba white truffle is prized worldwide for its exquisite aroma and flavour.

The wild fungi, which grows only in winter around the roots of oak, poplar and linden trees, is at its best from October to December.

For a limited time, two Michelin-starred French restaurant Le Normandie at Mandarin Oriental, Bangkok is presenting to the city's highbrow epicures fresh and fragrant Alba white truffle through an elegant five-course menu.

Crafted by the restaurant's star-studded chef de cuisine, Arnaud Dunand Sauthier, the menu showcases an uncanny unification of his dexterity in French haute cuisine and the deeply-valued Italian tuber.

The dishes include winter organic vegetables with house-made gnocchi and freshly-shaved Alba white truffle; veal head with potato, brown butter sauce and white truffle; line-caught monkfish with lovage, celeriac and white truffle; and free-range French chicken with Jerusalem artichoke, Albufera sauce and white truffle.

For dessert, there's an aromatic Floating Island with hazelnut and white truffle ice cream.

The special Alba white truffle set menu is available for lunch and dinner at 12,500 baht per person. A la carte dishes prepared with Alba white truffle are also available. Advance reservations are required.
