The culinary expertise of Chef Luca Russo, supported by Executive Chef Andrea Montella, is on full display. An eight-course menu, crafted to tantalise and elevate the senses, narrates an epicurean story, each course a celebration of innovation and seasonal delicacies. The gala begins with the luxurious Imperial Oscietra Caviar, sustainably sourced from the tranquil waters of Hua Hin, followed by the tender Butter Poached Nova Scotia Lobster, complemented by avocado and Pachino tomatoes. Next, indulge in Pan-seared Landais Duck Foie Gras, paired with caramelised apples and pistachio chips, followed by Porcini Veloute Truffle Gnocchi, a rich blend of velvety textures and earthy truffle notes. The White Truffle Fagottelli pays homage to Rome's legendary culinary scene.

As the evening reaches its climax, savour the Wild Atlantic Turbot, paired with a robust red prawn reduction. The pinnacle of the meal is the 72-hour Japanese Hitachiwagyu Beef, a master-piece of patience and precision, leaving a lingering taste of luxury. The dessert, created by Chef Tawat, is a rich blend of Guayaquil 64% Dark Chocolate and Apricot — a perfect bal-ance of dark chocolate richness and the tartness of fruit, symbolising the past year's joys and the promise of the future. Priced at THB 16,555++ per person, the gala includes a complimentary bottle of Champagne Pommery Brut Royal N.V. per couple, symbolising the spirit of celebration. A live band will provide the soundtrack to this unforgettable night.
