Mallorca chef visits Bangkok

Hailing straight from Spain's two-Michelin starred Zaranda restaurant in Mallorca, world-acclaimed chef Fernando P. Arellano will be hosting a one-night-only gala dinner at Bangkok's Uno Mas restaurant on Nov 30.

Chef Arellano is among the most respected names in the Spanish culinary sphere. Armed with a wealth of experience and skills, over his 30-year career he has cooked in some of Europe's most famous kitchens, including Patrick Guilbaud in Dublin; Le Gavroche in London; Don Alfonso 1890 in Naples; and Can Fabes in Barcelona.

The globe-trotting chef opened his first restaurant, Zaranda, in his hometown of Madrid in 2005. Within just a year, it was awarded a star by the Michelin Guide.

In 2010, Zaranda was relocated to the historic country-house hotel Castella Son Claret in Mallorca, one of the largest islands of the Balearic archipelago, and immediately regained its first star. The second star came six years later, putting the restaurant at the forefront of the island's fine dining.

Arellano is praised for his profound respect for natural produce and flavours, as well as his sublime passion and creativity in marrying fresh local ingredients with innovative flair.

During his visit at Uno Mas, epicures in Bangkok are promised his eye-catching and palate-intriguing creations, showcased through a six-course dinner.

Portraying the Balearic cuisine finesse, the menu features dishes such as Majorica oyster caviar with horse radish and pickled pearls; lightly smoked wagyu beef parcels with caramelised onion custard and truffle; All I Pebre (paprika spiced octopus and potato velouté); The Blackegg (white onion and cuttlefish caviar); Ibérico pork steak with Moorish spice and honey aubergines; and Four Seasons of a Mallorcan almond.

The meal will be complemented by fine Spanish wine, including Codorniu Reina Maria Cristina Blanc de Noirs DO Cava Brut Reserva 2013; Chivite Coleccion 125 Rosado 2013; Pocellanic Vi Xarel Lo Orangebi Vino, RimBau 2010; Pazo Señorans Selección de Añada 2008; and Scala Dei Cartoixa DOQ Priorat 2012.

With limited seating for 45 guests, the dinner is priced at 7,955 baht per person.
