Art mocks life at La Vue amid this fascinating boutique venue’s tantalising local take on merry-season dining

Siam@Siam Design Hotel, Bangkok’s most artistically unique high-end hospitality venue, presents a Christmas Day dining experience of sweeping selection and masterful preparation.

A visually riotous, kaleidoscopic landscape of wildly disparate and intriguing art pieces, Siam@Siam’s interior is a lesson in ‘absurdism décor’ that appears to channel the combined creative mojo of Dali, Warhol, Gaudí and Dr. Seuss, including a cartoonishly outsized chair, a faux-stone wall seemingly caught midway birthing a giant’s face, and backlit paintings hung oddly from the ceiling, mingled willy-nilly with palm-sized decorative gemstones, surrealist portraits and a pair of door-sized impressionist nudes serving as restroom gender indicators.

And amid this sensory stimulating, all-surrounding art-house motif, Christmas day 2017 comes to La Vue restaurant with the “It’s all about 25” promotion, featuring a selection of appetizers, main courses and desserts, from which guests may choose any twenty-five selections. (La Vue is on the 25th-floor, btw… coincidence?)

Chef Molthep Kamolsilp’s “French Technique, 100% Thai Ingredients” cooking approach focusses on the individual fragrances of the foods, and how they become something that is more than the sum of their parts when combined. To give his subtle, meticulously curated ingredients a bit if a rustic feel, Chef “Thep” likes to keep his blendings slightly course, imparting an intriguingly complex character and engaging mouthfeels.

Whereas many menu designers speak of far-off lands from which their delicacies are shipped, Chef Thep travels throughout Thailand, meeting with the rural and hill tribe farmers who use generations-old farming techniques to raise the foods that go into his dishes. This means that not only do Chef Thep’s creations taste extraordinary and exude a sophisticated simplicity, his modern-traditional cooking approach is steeped in respect for the land and promotes environmental conservation.

The amuse bouche-style dishes include such inspired culinary creations as the miang kham-channeling Betel leaves with Prawn and Pickled Seaweed Wrap, quirky cuisine-hybrid Chicken Satay Mousse Mini Tacos; and the truly innovative Poached egg with Smoked Threadfin Fish and Wolffia, the latter ingredient being a miniscule water plant which can be described as “vegetarian caviar”.

Main course options include Prajuabkririkhan Squid Olive leaves and burnt green chili; and Diced Seabass Belly Ravioli with a crisped fish-skin “cracker”; and intensely flavourful Soft-poached Onzen Egg in dried fish-tamarind broth.

And for some high-altitude after-dinner conversation with a 360-degree rooftop view, guests can pop one flight up for a drink at S@S’s al fresco bar The Roof Gastro with its enchanting “light garden” décor.
