Colour your afternoon bright and beautiful with Peacock Alley’s Afternoon Tea Set

Waldorf Astoria Bangkok is pleased to introduce its latest afternoon tea set, inspired by the vivid colours of life. “Chef Toddi and I carefully planned this set together. Our idea was to bring bright and beautiful colours to life at teatime. Chefs are artists too, but instead of painting on a canvas we splash the colours on a plate and serve art that you can also eat,” Italian executive pastry chef Andrea Noli said with a grin. The new afternoon tea set will be served at Peacock Alley during 1:00 p.m. – 5:00 p.m. daily commencing Friday, April 1, 2022.

The set of fine savoury and sweet pastries, perfectly balanced with complementary flavours and colours, was created by Noli and executive sous-chef Chalit Kobaukaew (aka Chef Toddi). Each delectable bite showcases their respective culinary finesse with flavour and technique, as well as the creativity to be able to imbue guests with cheer through their food.

Highlights of the vibrant sweet pastries include: Mango Pina Colada Mousse; Matcha Mousse with Soft Yuzu Insert; Strawberry Sponge Cake with Mascarpone Vanilla Chantilly, Cheese Cake and Raspberry Ice Cream. “The colours you see will make it easy for you to guess the main ingredient and flavour. It is very straightforward. For example, the green pastry is made with green tea – but to balance out some of the bitterness of matcha, we add a hint of sour yuzu,” Noli added. 

The savoury selection includes: Lobster Salad, Mint Jelly Cup and Chlorophyll Pearls; Smoked Tuna, Spice Mentaiko Truffle Sauce and Almonds Tuile; Charcoal Buttermilk Kadaknath Chicken with Sun-Dried Olive; Foie Gras Parfait, Lime and Crunchy Blueberries; Butternut and Truffle Sphere Tart; King Salmon Ball with Spicy Cream Sauce topped with Ikura; and Bacon Cream and Cauliflower Risotto. “Keep calm and keep life colourful,” said Chef Toddi with a bright smile.   

The new afternoon tea set features a selection of delectable savoury and sweet pastries, freshly-baked scones served with clotted cream, lemon cream and strawberry jam, Mariage Frères tea, or coffee, and is priced at THB 2,500++ (or THB 2,943 net) for two.
