Sylvian Sendra returns to Bangkok

Vie Bangkok is to once again showcase the culinary finesse of Sylvain Sendra, chef-owner of Paris' Michelin-starred Itinéraires, during his four-day visit to the hotel's La Vie from Feb 14-17.

Chef Sendra was a winner of the Rising Stars of Gastronomy contest organised by Champagne Jacquart in 2008. In 2009, his restaurant was selected Best Bistro of the 5th District of Paris by Gault & Millau. His first Michelin star was granted in 2013.

His career profile includes years of training under chef Jean Marc Delacourt at two Michelin-starred La Chèvre d'Or in Eze, the French Riviera; and chef Alexis Gauthier at Michelin-starred Roussillon restaurant in London.

At the age of 24, Sendra opened a 26-seat Parisian bistro, Le Temps au Temps, which was widely praised by the media.

A more refined establishment, Itinéraires was launched in 2008 with a menu incorporating unique culinary inspirations acquired from his globetrotting -- for example, from Peru and Japan. The cuisine has been described as offering "a great snapshot of the best of contemporary French bistro cooking".

Specially for epicureans in Bangkok, chef Sendra has crafted up a 4-course set lunch and a 6-course set dinner, a demonstration of his innovative and celebrated skills.

The menu features the likes of foie gras ravioli with chicken, ginger and lemongrass stock; sweet potato cappuccino with oyster sorbet, lemon and caviar; cod fish with carrots, orange purée, passion fruit and carrot sauce; Black Angus beef tenderloin with Jerusalem artichoke foam, cabbage powder, spinach and chicken jus; and chocolate pannacotta and sweet tangerine soup with yuzu cappuccino desserts.

Lunch is priced at 3,000 baht net per person for food only, 4,500 baht net per person for food-and-beverage pairings. Dinner costs 6,000 baht net per person for food only, 8,000 baht net per person for food-and-beverage pairings.

The selection of pairing wines includes Louis Roederer Premier Brut Champagne NV; Greywacke Riesling, Marlborough, New Zealand, 2014; and La Fleur de Bouard, Pomerol, Bordeaux, 2010.
