The Reflexions modern French restaurant at the Atheenee Hotel Bangkok is to welcome head chef Ludovic Turac of Michelin-rated Une Table Aud Sud restaurant in Marseille, France, to showcase his culinary finesse from March 20-24.
The southern French native, now 27, learned his trade at a number of prominent Parisian restaurants, including three Michelin-starred Le Bristol and Guy Savoy, as well as the prestigious Hotel du Castellet near Marseille. Along the way, he won the coveted Top Chef award.
Turac, with his dining director-cum-sommelier wife Karine, took the helm of Une Table Aud Sud in 2013. Together, they have made it one of the most celebrated culinary establishments in France.
Une Table Aud Sud was granted a Michelin star in 2015, making Turac, then 24, the youngest recipient of the accolade.
Following his cooking philosophy of "change everything so that nothing changes", he will present to diners in Bangkok a series of multi-course lunches and dinners, with optional wine pairings.
Among his signature dishes to be served are meunière sole fish, blanquette style, with leeks and nutmeg; petit baba in hibiscus infusion, citrus sherbet and black pepper cream; soft-boiled egg mollet-style with celery cream and sea urchin concentrate jus; bouillabaisse à la Marseillaise with Provencal saffron; and milk-fed veal fondant with ratatouille, braised fennel and jus.
Prices are 1,800 baht per person for a 3-course set lunch, or 2,480 baht with wine pairing; 2,500 baht per person for a 5-course set lunch, or 3,480 baht with wine paring; 3,900 baht per person for a 7-course set dinner, or 5,580 baht with wine paring; and 4,300 baht per person for a 9-course set dinner, or 6,280 baht with wine paring.
