World-renowned three-Michelin-star restaurant, Maison Troisgros led by Cesar Troisgros, son of Michel Troisgros, is staging his culinary debut at Le Normandie, Mandarin Oriental, Bangkok, from February 6-11.

Located in Roanne, a small town some 90 kilometres west of Lyon on the frontiers of Burgundy, Maison Troisgros specialises in French cuisine and serves fine Burgundy wines. The restaurant has held three Michelin stars since 1968 and was named the "Best French Restaurant in the World" by Gault Millau guide.

The Troisgros is a family of French restaurateurs, with Jean and Pierre Troisgros playing a significant role in the history of French cuisine since 1957. Both became world famous for their development of the haute cuisine.

Pierre's son, Michel Troisgros, picked up the reins in the late '80s. Though very much grounded in classical French food, Michel has embraced other influences, most notably Japanese and Italian, thanks to his journeys and experience from abroad. Michel's cooking is contemporary _ innovative and curious with light, fresh and sharp flavours.

Michel's son, Cesar Troisgros joined his father in the kitchen from a very young age. He also did his apprencticeship by studying in kitchens across the world and today is the latest scion of this renowned French cooking family.

At Le Normandie, Cesar Troisgros will present a five-course lunch menu featuring such innovative cuisine as razor clams, apple jelly and basil; foie gras custard with clementine; red mullet with truffle and parsley; spicy rack of lamb; and sublime chocolate tart with pistachio.

His seven-course dinner menu features mackerel, pink jelly; foie gras custard with clementine; endive flower with caviar; sole with chives; spiced and caramelised Challans duck; selection of fresh and matured French farmhouse cheese; and basil panna cotta and strawberry.

He will also prepare a special wine dinner on February 11. The gourmet dinner menu will be paired with superb Burgundy wines from Domaine Ponsot from Morey Saint Denis.

The dinner menu and wines are mackerel, pink jelly (Morey St Denis 1er cru blanc Clos des Monts Luisants 2007); endive flower with caviar (Morey St Denis Cuvee des Grives 2003); foie gras custard with clementine (Griotte Chambertin 2003); red mullet with truffle and parsley (Chapelle Chambertin 2003); Black Angus prime rib with Morey St Denis wine sauce (Clos de la Roche Cuvee Vieilles Vignes 1999); selection of fresh and matured French farmhouse cheese (Clos de Vougeot Cuvee Vieilles Vignes 2003); and chocolate dim sum with pistachio.

Prices for this exclusive culinary promotion at Le Normandie are 5,065 baht net for lunch; 9,420 baht net for dinner; and 12,830 baht net for the wine dinner.
