On June 2-4, Reflexions, modern French cuisine restaurant at the Athenee Bangkok, is to welcome Sang Hoon Degeimbre, chef-owner of two Michelin-starred L'air du Temps restaurant in the south east of Belgium.
Degeimbre was born in Korea but adopted at the age of five by a Belgian family. By the age of 14, he discovered his love for cooking. Later on as he was sharpening his culinary skill, he developed a passion for wine and soon found himself a hugely-successful sommelier.
His oenophilia résumé includes stints at La Truffe Noire in Brussels; Petit Versailles in Gosselies; and La Salicorne, La Hulpe and L'Eau Vivein Arbre.
In 1997, Degeimbre returned to kitchen craft and opened his own restaurant, L'air du Temps, with his wife. It was granted its first Michelin star in 2000 and the second one in 2008.
Degeimbre's cooking philosophy combines high-concept cuisine with local ingredients and innovative use of technology like sous vide, ultrasonic devices, immersion heating and even ultrasound.
He has gained high critical acclaim for trying to push conceptual boundaries in a seamless, inspiring marriage of Belgian and Korean cuisine. His creations are celebrated as a perfect balance between contemporary European cuisine and Korean influences.
During his visit to Bangkok, chef Sang Hoon Degeimbre will present a series multi-course set menu for lunch and dinner. Certainly, all come with optional wine parings.
The meals include dishes such as green asparagus with bacon croutons and sweet wine sauce; cod fish with apple, fennel, anchovies and bulgur; blue lobster with tomato jangagii and geranium flowers; eel with foie gras and black sesame; "Sunday in Belgium" chicken with apple and potato; pain Perdu salsify; and Cuberdon potatoes, white chocolate.
